Join us for a Northern Thai feast, inspired by Tommy’s family recipes and almost certainly different from most Thai food you’d eat in the UK.
Tommy’s mum was born in the Northeast, Isaan, region famous for its use of aromatic herbs, vegetables, and spices in its cuisine; and characterised by marinated meats and hot + tangy dipping sauces.
The hot and humid climate in Isaan means traditionally that the food relied on preservation and fermentation. Nowadays, it means that these dishes are oozing with flavour.
